Tacos With Mixed Greens & Tahini Cucumber Dressing

Ingredients
  

  • 1 tablespoon coconut oil
  • 1 pound ground turkey
  • 1 tablespoon taco seasoning
  • 8 taco shells
  • 2 cups salsa
  • 2 avocados sliced
  • 2 cups green cabbage chopped
  • 8 cups mixed greens
  • 2 cups purple cabbage chopped
  • 1 cup carrot shredded

For the Tahini Cucumber Dressing

  • 1/2 cup tahini
  • 2 lemons juiced
  • 1 large cucumber roughly chopped
  • 1 garlic clove
  • 1 teaspoon cumin
  • sea salt to taste
  • Black pepper to taste

Instructions
 

  • SAUTÉ TACO MEAT. Melt coconut oil into a large pan over medium heat. Next, add the ground turkey. Break the meat up with a spatula so that it crumbles. Season with taco seasoning and mix well. Continue to sauté for about 7 minutes until the meat is no longer pink. Set aside to cool.
  • ASSEMBLE TACOS. Place taco shells on plates. Place salsa, avocado, and green cabbage in small serving bowls to be used as toppings. Assemble tacos with taco meat and desired toppings when ready to eat.
  • ASSEMBLE SALAD. Place the mixed greens, purple cabbage, and carrot in a bowl. Mix well. Add the dressing ingredients to a high-speed blender and blend until smooth. Pour over the salad. Serve salad with tacos.
