Ingredients
  

  • 1 Plantain sliced
  • 2 cups kale rinsed
  • 1 tablespoon olive oil
  • 2 tablespoons coconut oil for frying
  • salt and pepper to taste

Instructions
 

  • Cut the plantain into small bite sized slices
  • Pre heat the coconut oil in a frying pan and add the plantain slices. Lightly pan fry on each side until lightly browned. Place on paper towel to cool when done.
  • Place the kale in a large bowl with the olive oil and salt and pepper. Massage until covered in oil and kale has relaxed a little.
  • Add plantain to the kale and enjoy!
