Sweet Plantain & Kale Salad
Ingredients
- 1 Plantain sliced
- 2 cups kale rinsed
- 1 tablespoon olive oil
- 2 tablespoons coconut oil for frying
- salt and pepper to taste
Instructions
- Cut the plantain into small bite sized slices
- Pre heat the coconut oil in a frying pan and add the plantain slices. Lightly pan fry on each side until lightly browned. Place on paper towel to cool when done.
- Place the kale in a large bowl with the olive oil and salt and pepper. Massage until covered in oil and kale has relaxed a little.
- Add plantain to the kale and enjoy!
