Sundried Tomato & Tahini Salad
Ingredients
- 1 3/4 cup lentils drained, 130g
- 1 cup sundried tomatoes drained, 70g
- 1/2 cup artichoke drained, 80g
- 1 cup spinach 225g
- 1/2 cucumber chopped
- 2 tbsp tahini
- 2 tsp apple cider vinegar
- 1 tbsp tamari or soy sauce
- 1 tsp honey
Instructions
- Prepare the vegetables and place them in a large bowl.
- Mix together the dressing ingredients (tahini, vinegar, tamari & honey), season with salt and pepper, and drizzle over the salad. Mix well, divide onto two plates and serve.
