Ingredients
  

  • 1 teaspoon coconut oil
  • 2 cups chopped kale
  • 2 eggs
  • 1/2 avocado
  • 1 1/2 ounces smoked salmon

Instructions
 

  • Add coconut oil to a large sauté pan over medium heat. When the oil is melted, add chopped kale. Sauté for about 5 minutes until wilted.
  • Next, whisk eggs in a bowl and pour it into the pan with the sautéed kale. Stir until the eggs are firm.
  • Serve in a clean bowl topped with avocado and smoked salmon.
