Ingredients
  

  • 1 tablespoon coconut oil
  • 3 eggs
  • 1/2 cup fresh spinach
  • 1 handful fresh basil

Instructions
 

  • Pre-heat the oven to 175C/350F.
  • Coat a muffin tray with coconut oil to avoid sticking. Whisk the eggs in a small bowl. Chop the spinach and basil.
  • Fill about ¾ of 3 muffin cups with the egg mixture. Then divide the vegetable mixture between the 3 muffin cups.
  • Bake in the oven for 18 minutes before serving.
