Omelette Cups
Ingredients
- 1 tablespoon coconut oil
- 3 eggs
- 1/2 cup fresh spinach
- 1 handful fresh basil
Instructions
- Pre-heat the oven to 175C/350F.
- Coat a muffin tray with coconut oil to avoid sticking. Whisk the eggs in a small bowl. Chop the spinach and basil.
- Fill about ¾ of 3 muffin cups with the egg mixture. Then divide the vegetable mixture between the 3 muffin cups.
- Bake in the oven for 18 minutes before serving.
