Creamy Dairy-free Curry Dressing
Ingredients
- 1/2 cup firm young coconut meat
- 3 tablespoons apple cider vinegar or lemon juice freshly squeezed
- 6 tablespoons coconut oil
- 1 teaspoon curry powder
- salt and pepper to taste
Instructions
- Blend coconut meat, apple cider vinegar, and curry powder in a blender
- Slowly add coconut oil while blending until it becomes creamy
- Add salt and pepper to taste.
- Toss with your favorite salad.
- Enjoy!
