Chicken Cobb Salad
Ingredients
- 1 tablespoon coconut oil
- 4 oz chicken breast
- Sea salt and black pepper to taste
- 2 cups fresh spinach
- 1 hardboiled egg chopped
- 1/2 cup chopped cucumber
- 2 slices nitrate free turkey bacon
- 1/2 avocado
- 1 tablespoon extra virgin olive oil
- Raw Apple Cider Vinegar to taste
Instructions
- Add coconut oil to a frying pan over medium heat. Season the chicken breast with salt and pepper. When the oil is melted, add the chicken breast. Cook for about 5 minutes per side until the center is no longer pink. Set to the side while making the remainder of the salad.
- Add the spinach, chopped egg, cucumber, bacon, and avocado to a large salad bowl. Top with sliced chicken breast, olive oil, sea salt and black pepper. Mix well and serve.
