Basic Green Salad
Ingredients
For the Salad:
- 1-2 cups romaine lettuce torn into small pieces
- 1-2 cup spinach or mixed baby greens chopped into small pieces
- 1/2 cup unpeeled sliced carrots
- 1/2 cup cherry tomatoes cut in half
- 2 tbsp chopped fresh herbs of choice
- 1/2 cup English cucumber half slices
- 1-2 tbsp chopped fresh parsley or dill
For the Dressing:
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1/2 tsp maple syrup or raw honey
- Sea salt and black pepper to taste
Instructions
- Place all salad ingredients in a bowl and mix together.
- Add the dressing and toss well. Don’t add all the dressing at once. More can be added later, if desired.
- For Dressing - Mix all the ingredients in a bottle and shake or mix well.
- Pour on top of a salad of mixed greens and vegetables and toss. If the vinegar taste is too strong, add a little water.
Notes
*Lemon juice or balsamic vinegar also work well in this recipe.
