Ingredients
  

For the Salad:

  • 1-2 cups romaine lettuce torn into small pieces
  • 1-2 cup spinach or mixed baby greens chopped into small pieces
  • 1/2 cup unpeeled sliced carrots
  • 1/2 cup cherry tomatoes cut in half
  • 2 tbsp chopped fresh herbs of choice
  • 1/2 cup English cucumber half slices
  • 1-2 tbsp chopped fresh parsley or dill

For the Dressing:

  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1/2 tsp maple syrup or raw honey
  • Sea salt and black pepper to taste

Instructions
 

  • Place all salad ingredients in a bowl and mix together.
  • Add the dressing and toss well. Don’t add all the dressing at once. More can be added later, if desired.
  • For Dressing - Mix all the ingredients in a bottle and shake or mix well.
  • Pour on top of a salad of mixed greens and vegetables and toss. If the vinegar taste is too strong, add a little water.

Notes

*Lemon juice or balsamic vinegar also work well in this recipe.
