  • 1/2 cup firm young coconut meat
  • 3 tablespoons apple cider vinegar or lemon juice freshly squeezed
  • 6 tablespoons coconut oil
  • 1 teaspoon curry powder
  • salt and pepper to taste

Instructions
 

  • Blend coconut meat, apple cider vinegar, and curry powder in a blender
  • Slowly add coconut oil while blending until it becomes creamy
  • Add salt and pepper to taste.
  • Toss with your favorite salad.
  • Enjoy!
