Ingredients
  

  • 24 fresh ackees or 2 cans
  • 1/2 lb salted cod fish soaked and flaked
  • 2 Medium onions finely chopped
  • 1 sweet pepper sliced
  • 1 tomato loosely chopped
  • 1 clove garlic chopped
  • 2 sprigs fresh thyme or ¼ tsp. dried thyme
  • 1 tsp Scotch Bonnet pepper with stem or ½ seeded and chopped
  • 1/4 cup coconut oil

Instructions
 

  • Soak fish for two hours or overnight covered in water. Drain and discard water.
  • Clean ackee, cover with cold water and bring to a boil (not canned ones).
  • Boil salt fish in fresh water changing twice. Drain. Remove bones and skin. Flake with fork and set aside.
  • To a pan add coconut oil, onions, tomatoes, garlic, scallion, thyme.
  • Sauté until the onion is transparent.
  • Add saltfish and Scotch Bonnet pepper (optional)
  • Add ackees, toss lightly as they break up easily, and cover.
  • Simmer for 3-5 minutes. Remove from flame.
  • Sprinkle with black pepper.
  • Enjoy with boiled green bananas, yam, sweet potatoes, callaloo, festival, or baked breadfruit
  • Another option is rolling in a wrap with veggies and lettuce. 🙂
