Ingredients
  

  • 1 tablespoon coconut oil
  • 4 oz chicken breast
  • Sea salt and black pepper to taste
  • 2 cups fresh spinach
  • 1 hardboiled egg chopped
  • 1/2 cup chopped cucumber
  • 2 slices nitrate free turkey bacon
  • 1/2 avocado
  • 1 tablespoon extra virgin olive oil
  • Raw Apple Cider Vinegar to taste

Instructions
 

  • Add coconut oil to a frying pan over medium heat. Season the chicken breast with salt and pepper. When the oil is melted, add the chicken breast. Cook for about 5 minutes per side until the center is no longer pink. Set to the side while making the remainder of the salad.
  • Add the spinach, chopped egg, cucumber, bacon, and avocado to a large salad bowl. Top with sliced chicken breast, olive oil, sea salt and black pepper. Mix well and serve.
