Ingredients
  

  • 1 3/4 cup lentils drained, 130g
  • 1 cup sundried tomatoes drained, 70g
  • 1/2 cup artichoke drained, 80g
  • 1 cup spinach 225g
  • 1/2 cucumber chopped
  • 2 tbsp tahini
  • 2 tsp apple cider vinegar
  • 1 tbsp tamari or soy sauce
  • 1 tsp honey

Instructions
 

  • Prepare the vegetables and place them in a large bowl.
  • Mix together the dressing ingredients (tahini, vinegar, tamari & honey), season with salt and pepper, and drizzle over the salad. Mix well, divide onto two plates and serve.
